my mother's wonderful beignets

as I said in my post on 24 hours of great eating, these beignets are second best only to cafe du mondes. this recipe is really good and they come together quickly, since you use rapid rise yeast.

1/8 cup sugar
1/2 teaspoon salt
1 3/4 cups bread flour
1 package yeast, rapid rise
1 tablespoon + 1/2 cup milk, warmed
1 egg, beaten
2 tablespoons butter, softened
oil for deep fat frying
confectioners sugar


  1. mix sugar, salt, bread flour, and yeast together.
  2. warm milk to 120 to 130 degrees.
  3. beat egg and milk into flour mixture, along with butter.
  4. allow to rise for 20 minutes. knead dough gently for 2 turns.
  5. roll out dough to 1/4 inch thickness.
  6. cut dough into rectangles (a pizza cutter works best).
  7. allow to rise for another 25 minutes.
  8. preheat your oil to 350.
  9. fry a few at a time, turning once when the bottom side has browned. drain on paper towels, then dust gently with confectioner's sugar.
