Fruit Cobbler

I usually do this with blackberries, but it is great with any fresh fruit.

2 cups fresh fruit, washed and chopped if needed
1 cup buttermilk
1 cup self-rising flour (you can use all-purpose flour instead, but the self-rising works better)
1 cup sugar
butter for the pan

  1. Pre-heat oven to 350
  2. Butter an 8-inch square or 9-inch round baking pan
  3. Spread the fruit out on the bottom of the pan
  4. In a bowl mix together the buttermilk, flour, and sugar until well combined (don't worry if it has a few lumps in it)
  5. Pour the mixture over the fruit spreading out to cover all the fruit
  6. bake for one hour, until golden on top or until a toothpick inserted in the middle comes out clean
  7. Top with vanilla ice cream or cool whip and enjoy!
