so, I've had quite a few people ask for my pesto recipe, so here it is:
1/2 cup fresh basil leaves
2 1/2 cup spinach
1/2 cup grated Parmesan or Romano
1/2 cup pine nuts, toasted (or walnuts)
4 garlic cloves, roughly chopped
1/4 teaspoon salt
1/2 cup olive oil
combine all ingredients in a blender.
blend until the mixture forms a thick paste, adding more oil if needed.
