1 pound bacon, crisp cooked
1 unbaked pie shell
1 cup shredded swiss or cheddar cheese
4 eggs
2 cups half-n-half
sugar to taste
1/8 teaspoon nutmeg
1/8 teaspoon cayenne
1/4 teaspoon salt
- preheat the oven to 400.
- crumble the bacon into the pie shell. sprinkle the cheese over the bacon.
- combine the remaining ingredients in a mixing bowl and beat for 1 minute. pour into the pie shell.
- bake on the lowest rack at 400 degrees for 15 minutes. reduce the oven temperature to 325 degrees and back for an additional 30 minutes or until a knife inserted into the center comes out clean.
